Fig, Polenta, Walnut Bread

One of our Baker's newest breads is a naturally Levained bread, featuring Anson Mills “Polenta di Mais Rustica”, an heirloom cornmeal grown in South Carolina.  They created a polenta that displays the floral corn aroma and creates a moist interior and then dotted it with plump figs and toasted walnuts.  This whimsical loaf is finished with cornmeal producing a distinct crisp crust.

Glenn Roberts and Anson Mills in South Carolina are nationally recognized for their focus on heirloom seeds and crop rotation. This is the very technique and process used to ensure quality crops that our ancestors have employed since 1850.
